Raw Tahini Blondie Bars Paleo Vegan Treat
Ingredients
Crust
- 1/2 cup pumpkin seeds
- 1/2 cup cashews
- 2 tbsp coconut oil or vegan butter
- 1 tsp honey, maple syrup or molasses
Dough
- 1/4 cup soaked puréed dates
- 1/4 cup tahini
- 2 tbsp coconut cream
- 2 flax eggs
- 1 tsp vanilla
- 1 tbsp coconut oil
- 2/3 cup hazelnut or almond flour
- 1/4 cup coconut flour
- 1 tbsp cacao nibs
Preparation
Blend 1/2 cup pumpkin seeds and 1/2 cup cashews until crumbled.
Mix the crumbled nuts with 2 tbsp coconut oil or vegan butter and 1 tsp honey, maple syrup or molasses.
Press a thin layer into a bread pan and freeze for 10-15 minutes.
Blend 1/4 cup soaked puréed dates, 1/4 cup tahini, 2 tbsp coconut cream, 2 flax eggs, 1 tsp vanilla, and 1 tbsp coconut oil in a food processor until creamy.
Transfer the mixture to a bowl and add 2/3 cup hazelnut or almond flour, 1/4 cup coconut flour, and 1 tbsp cacao nibs.
Spread the dough thickly over the frozen crust and refrigerate.
Optionally, drizzle with extra dark chocolate.
