Raw Tahini Blondie Bars Paleo Vegan Treat

Ingredients

Crust

  • 1/2 cup pumpkin seeds
  • 1/2 cup cashews
  • 2 tbsp coconut oil or vegan butter
  • 1 tsp honey, maple syrup or molasses

Dough

  • 1/4 cup soaked puréed dates
  • 1/4 cup tahini
  • 2 tbsp coconut cream
  • 2 flax eggs
  • 1 tsp vanilla
  • 1 tbsp coconut oil
  • 2/3 cup hazelnut or almond flour
  • 1/4 cup coconut flour
  • 1 tbsp cacao nibs

Preparation

  1. Blend 1/2 cup pumpkin seeds and 1/2 cup cashews until crumbled.

  2. Mix the crumbled nuts with 2 tbsp coconut oil or vegan butter and 1 tsp honey, maple syrup or molasses.

  3. Press a thin layer into a bread pan and freeze for 10-15 minutes.

  4. Blend 1/4 cup soaked puréed dates, 1/4 cup tahini, 2 tbsp coconut cream, 2 flax eggs, 1 tsp vanilla, and 1 tbsp coconut oil in a food processor until creamy.

  5. Transfer the mixture to a bowl and add 2/3 cup hazelnut or almond flour, 1/4 cup coconut flour, and 1 tbsp cacao nibs.

  6. Spread the dough thickly over the frozen crust and refrigerate.

  7. Optionally, drizzle with extra dark chocolate.
