Raw Vegan Pasta


  • 2 zucchinis, spiralized
  • 1 firm tomato, heirloom is delicious
  • 1/2 red bell pepper
  • 1/2 onion
  • 1 garlic clove, or more if preferred
  • 2-3 sundried tomatoes
  • few sprigs of basil, fresh or dried (1/2 tsp)
  • 1/2 tsp of oregano
  • 1 tbsp of pine nuts
  • sliced mushrooms
  • OPTIONAL spices to add: smoked paprika, cumin, cayenne pepper


  1. Roughly pulse/blend tomatoes (fresh and sundried), onion, oregano, basil, garlic, pepper, pine nuts - make sure to keep it chunky

  2. Pour on top of zucchini noodles

  3. Place mushrooms on top with crunched up tomato pesto chips by @justpurefoods (or kale chips of choice)
