Raw Vegan Pasta
Ingredients
- 2 zucchinis, spiralized
- 1 firm tomato, heirloom is delicious
- 1/2 red bell pepper
- 1/2 onion
- 1 garlic clove, or more if preferred
- 2-3 sundried tomatoes
- few sprigs of basil, fresh or dried (1/2 tsp)
- 1/2 tsp of oregano
- 1 tbsp of pine nuts
- sliced mushrooms
- OPTIONAL spices to add: smoked paprika, cumin, cayenne pepper
Preparation
Roughly pulse/blend tomatoes (fresh and sundried), onion, oregano, basil, garlic, pepper, pine nuts - make sure to keep it chunky
Pour on top of zucchini noodles
Place mushrooms on top with crunched up tomato pesto chips by @justpurefoods (or kale chips of choice)
