Red Pepper Guacamole Cups
Ingredients
- 1 red bell pepper (cut in half with seeds removed)
- chickpeas, cooked or sprouted (as you prefer)
- 1 ripe avocado
- 1 medium tomato, roughly chopped
- 1/2 red onion or green onions (scallions), chopped
- 1 clove garlic, minced
- 1 fresh lemon or lime juice
- sea salt and pepper (cayenne and black), to taste
- handful of fresh cilantro (optional)
Preparation
Mash all ingredients (besides the red bell pepper and chickpeas)
Mix in chickpeas into guacamole and scoop into red bell pepper cups! Enjoy
