Red Pepper Guacamole Cups

Ingredients

  • 1 red bell pepper (cut in half with seeds removed)
  • chickpeas, cooked or sprouted (as you prefer)
  • 1 ripe avocado
  • 1 medium tomato, roughly chopped
  • 1/2 red onion or green onions (scallions), chopped
  • 1 clove garlic, minced
  • 1 fresh lemon or lime juice
  • sea salt and pepper (cayenne and black), to taste
  • handful of fresh cilantro (optional)

Preparation

  1. Mash all ingredients (besides the red bell pepper and chickpeas)

  2. Mix in chickpeas into guacamole and scoop into red bell pepper cups! Enjoy
