Roasted Oca with Steamed Broccoli and Grilled Asparagus
Ingredients
- oca tubers
- a little olive oil
- Himalayan salt
- pepper
- asparagus
- broccoli
- fresh horseradish root
- 1 avocado
- 1 tablespoon apple cider vinegar
- 1 tablespoon raw olive oil
- 1 tablespoon water
- hemp seeds
Preparation
Roast the oca tubers in the oven with a little olive oil, Himalayan salt, and pepper.
Rub the asparagus with olive oil, sprinkle with salt and pepper, and grill it.
Steam the broccoli in a bamboo steamer.
Prepare the dip by finely grating fresh horseradish root, then add 1 avocado, 1 tablespoon apple cider vinegar, 1 tablespoon raw olive oil, Himalayan salt, pepper, and 1 tablespoon water, and blend it all together well.
Sprinkle the entire meal with hemp seeds.
