Sambal Oelek
Ingredients
- 4 servings fresh/dried noodles
- ~ 1 package gardein lightly seasoned chick'n scallopini, cut into strips
- ~ 1 cup sliced King oyster mushrooms
- ~ 1 medium onion, sliced
- ~ 1/2 cup shredded carrots
- ~ 2 cups fresh mung bean sprouts
- ~ 2 stalks scallions, chopped
- ~ oil, salt to taste
- Sauce: Mix all ingredients until well combined
- ~ 2 tablespoons soy sauce
- ~ 1 tablespoon stir-fry sauce
- ~ a few dashes of white pepper
Preparation
Cook noodles based on package's instructions, drain well & set aside. In a heated non-stick pan with 1 tablespoon oil, saute onion & carrot until aromatic. Then push both ingredients to the side of the pan, add a little more oil & pan-fry mushrooms & chick'n scallopini until lightly brown on both sides. Add in cooked noodles, sauce & the rest of the ingredients. Using a pair of tongs, toss noodles until they are well-coated with sauce over low-medium heat (add a little water/stock if it's too dry). Season accordingly to your preference
