Sansa's Vegan Lemon Cakes

Ingredients

  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 dash of salt
  • 1/2 cup of cane sugar
  • 3 tablespoons of unscented oil
  • zest and juice of 1/2 lemon
  • 1/2 cup soy milk ( 1/4 cup depending on the flour )
  • 1/2 teaspoon apple cider vinegar
  • sugared lemon slices *
  • 1 dash of cardamom powder
  • 1 dash of zafron threads

Preparation

  1. Mix the vinegar with the milk and rest for 10 minutes

  2. Mix all dry ingredients together

  3. Mix remaining wet ingredients with the milk

  4. Mix the dry with the wet ingredients

  5. Place sugared lemon slices on a greased baking pan

  6. Pour the batter on the lemons , filling the trys 2/3 full

  7. Bake at a preheated oven of 180 celsius for 15 to 18 minutes

  8. Let cool and enjoy

  9. Simmer 1/2 cup of sugar with 1/2 cup of water with slices of 1/2 lemon for 15 minuets
