Savory Spelt Flour Breakfast Bread with Tomatoes

Ingredients

  • 1 1/2 cup spelt flour whole grain
  • 1/2 cup almond flour
  • 1 cup cashew milk or oats milk
  • 175 ml olive oil
  • 1/2 tsp baking soda
  • 2 tsp baking powder
  • salt to taste
  • cherry tomatoes
  • 2 tsp poppy seeds
  • 1/2 tsp black pepper
  • 1 tsp lemon juice
  • handful coriander leaves
  • 1 tsp fennel powder

Preparation

  1. Mix all the dry ingredients together along with spices and mix well.

  2. Add lemon juice to the milk and leave it aside until it curdles.

  3. Once curdled, add oil and whisk well.

  4. Add the wet mixture to the dry mixture and fold well, but do not overmix.

  5. Transfer the batter into a baking tin and layer with sliced cherry tomatoes.

  6. Bake for 30 minutes or until done.

  7. Serve with any chutney or coffee or tea.
