Savory Vegan Sourdough with Browned Butter Mushrooms, Sage, and Thyme
Ingredients
- 2 slices sourdough toast
- 4 tbsp butter
- 4 cups gourmet blend mushrooms
- 8 sage leaves
- 15 sprigs of thyme
- 8 minced garlic cloves
Preparation
Butter each side of the sourdough and place it on a pan over medium heat. Sear each side for a few minutes while pressing down with a spatula.
Toast both sides of the sourdough until they are golden brown. Set aside.
Add 3 tbsp of butter to the pan along with minced garlic, thyme, and sage. Cook until softened for 3-5 minutes. Remove from the pan and set aside in a small bowl.
In the same pan, add the mushrooms. Cook them with 1/3 cup of water or vegetable stock, and simmer until the mushrooms have softened and browned.
Remove the liquid from the pan and add back the melted butter, thyme, garlic, and sage. Stir the mixture for 2 minutes over medium heat.
Serve the mushroom mixture on top of the sourdough toast.
