Easy Nutritious Silverbeet Rice Dish

Ingredients

  • 1 diced onion
  • 1 tsp minced garlic
  • 1 tablespoon olive oil
  • 1 whole bunch of silverbeet chopped up
  • 1 cup of basmati rice
  • 2 tsp herbamare or salt

Preparation

  1. Sauté onions in oil until soft and golden.

  2. Add minced garlic and rice and cook for a few minutes.

  3. Add silverbeet and 1/2 cup of water and let it simmer for 5 minutes.

  4. Add 1.5 cups of water or stock and cook the rice for 10-15 minutes or until soft and ready.

  5. Serve with lemon squeezed on top, or traditionally with yogurt, but it can be enjoyed without for dairy-free or vegan preferences.
