Easy Nutritious Silverbeet Rice Dish
Ingredients
- 1 diced onion
- 1 tsp minced garlic
- 1 tablespoon olive oil
- 1 whole bunch of silverbeet chopped up
- 1 cup of basmati rice
- 2 tsp herbamare or salt
Preparation
Sauté onions in oil until soft and golden.
Add minced garlic and rice and cook for a few minutes.
Add silverbeet and 1/2 cup of water and let it simmer for 5 minutes.
Add 1.5 cups of water or stock and cook the rice for 10-15 minutes or until soft and ready.
Serve with lemon squeezed on top, or traditionally with yogurt, but it can be enjoyed without for dairy-free or vegan preferences.
