Simple Buttery Vegetarian Curry

Ingredients

  • Brown onions
  • Vegetarian chicken substitute
  • Gold salad potatoes
  • 1 tablespoon curry powder
  • 1 teaspoon sweetener
  • 3 teaspoons butter spread
  • 1 vegetable stock pot
  • Shredded spinach
  • Basmati rice

Preparation

  1. Slice and fry the onions until caramelised in a wok

  2. Add the vegetarian chicken substitute to the wok with the onions

  3. Slice the potatoes and boil them until tender, then add to the wok

  4. Boil the basmati rice in a separate pot until cooked

  5. Add curry powder, sweetener, butter spread, vegetable stock pot, and shredded spinach to the wok

  6. Stir everything together and heat through until well combined

  7. Serve the curry with the boiled rice
