Simple Vegetarian Potato and Quail Egg Curry
Ingredients
- Seasonal gold potatoes
- 1.5 onions
- Spray oil (1)
- Plum vine tomatoes
- Naked Glory roast readybites
- Knorr vegetable stock pot
- A little water
- 4 quail eggs
Spices
- Garlic powder
- Onion salt
- Ground ginger
- Medium curry powder
- Garam masala
- Turmeric
Preparation
Boil the scraped gold potatoes until tender.
In a wok, slowly fry the sliced onions with spray oil until softened.
Add the plum vine tomatoes to the wok.
Add the Naked Glory roast readybites, spices, Knorr vegetable stock pot, and a little water.
Stir in the boiled potatoes.
Add the quail eggs and cook until done.
Stir through and serve.
Notes
The quail egg yolks add a lovely creaminess to the curry.
