Simple Vegetarian Potato and Quail Egg Curry

Ingredients

  • Seasonal gold potatoes
  • 1.5 onions
  • Spray oil (1)
  • Plum vine tomatoes
  • Naked Glory roast readybites
  • Knorr vegetable stock pot
  • A little water
  • 4 quail eggs

Spices

  • Garlic powder
  • Onion salt
  • Ground ginger
  • Medium curry powder
  • Garam masala
  • Turmeric

Preparation

  1. Boil the scraped gold potatoes until tender.

  2. In a wok, slowly fry the sliced onions with spray oil until softened.

  3. Add the plum vine tomatoes to the wok.

  4. Add the Naked Glory roast readybites, spices, Knorr vegetable stock pot, and a little water.

  5. Stir in the boiled potatoes.

  6. Add the quail eggs and cook until done.

  7. Stir through and serve.

  1. The quail egg yolks add a lovely creaminess to the curry.
