Vegetarian Katsu Nuggets and Fries

Ingredients

  • 12 Vivera plant tenders
  • Bag of Naked Glory roast readybites
  • Beaten egg
  • 60g Sainsbury's breadcrumbs
  • 2 tablespoons hot curry powder
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon garlic powder
  • A little sweetener
  • Salt
  • Water
  • 1 tablespoon curry powder
  • Garlic
  • Onion salt
  • Ground ginger
  • Sweetener
  • Knorr vegetable stock pot
  • 1 tablespoon cornflour
  • 1 Laughing Cow extra light cheese triangle

Nuggets preparation

  • Chopped plant tenders and roast readybites

Sauce

  • Curry sauce components as listed

Preparation

  1. Chop the plant tenders and roast readybites finely and mix together, then shape into nuggets

  2. Dip the shaped nuggets in beaten egg

  3. Coat the nuggets with a mixture of breadcrumbs, hot curry powder, ground ginger, garlic powder, sweetener, and salt

  4. Spray the coated nuggets with oil and air-fry in a Tefal Actifry snack basket attachment until golden and crispy

  5. For the curry sauce, combine water, curry powder, garlic, onion salt, ground ginger, sweetener, vegetable stock pot, cornflour, and cheese triangle in a pan

  6. Heat the sauce mixture until thickened and well combined

  7. Prepare any accompanying fries and salad as desired
