Katsu-Style Vegetarian Nugget Sliders
Ingredients
- 12 Vivera UK plant tenders
- 1 bag Naked Glory UK roast readybites
- Eggs
- 60g Sainsbury's breadcrumbs
- 2 tablespoons hot curry powder
- 1/2 teaspoon ground ginger
- 1/2 teaspoon garlic powder
- Sweetener

- 300ml water
- 1 tablespoon curry powder

- 1 Knorr vegetable stock pot
- 1 tablespoon cornflour
- 1 Laughing Cow extra light cheese triangle
- 2 mini wholemeal sub rolls
- 1 tablespoon lighter than light mayo

- 1 Dairylea light cheese triangle
Preparation
Finely chop the plant tenders and roast readybites, mix together and shape into nuggets.
Dip each nugget in beaten egg, then coat with the breadcrumb mixture.
Cook the nuggets until golden and crispy.
For the curry sauce, combine water, curry powder, garlic, onion salt, ground ginger, sweetener, vegetable stock pot, cornflour, and cheese triangle in a saucepan; heat and stir until thickened.
Assemble the sliders by spreading mayo on the sub rolls, adding wild rocket, cheese pieces, cooked nuggets, and a drizzle of curry sauce.
