Simple Green Salad with Sesame Brittle
Ingredients
- 2 cups rocket
- 1 cup broccoli florets, blanched
- 1 avocado, halved and sliced
Sesame brittle
- 2 Tbsp sesame seeds
- 1 Tbsp rice malt syrup
- 1 tsp sesame oil
Dressing
- 2 Tbsp lemon juice
- 1 Tbsp red wine vinegar
- 1 tsp honey
- 2 cloves garlic
- 1/3 cup nutritional yeast
- 1 tsp chili powder
- 2 tsp Worcestershire sauce
- Handful fresh herbs
- 1/3 cup olive oil
- Salt to taste
Preparation
Preheat the oven to 200°C and line a small baking tray with parchment paper.
In a small bowl, combine the rice malt syrup, sesame oil and sesame seeds. Spread the seeds out on the baking tray in a single layer. Bake for 10 minutes until golden.
Remove from the oven and allow to cool before breaking up.
Add the dressing ingredients to a high-speed blender and blend until smooth.
Add the rocket and blanched broccoli to a salad bowl. Top with the avocado, brittle and dressing.
Assembly hack
Assemble the dressing in the bottom of a wide and shallow bowl.
Place a plate over the dressing to section it off from the rest of the bowl.
Add the salad ingredients on top to keep them nice and crisp.
When ready to serve, slide the plate out and toss the salad with the dressing.
Remember to remove the plate.
