Slow Cooker Sweet Potato & Cauliflower Soup (Vegan)
Ingredients
- 2 tbsp olive oil
- 1 yellow onion, diced
- 1 tbsp finely minced garlic
- 1 tbsp finely minced ginger
- 4 cups cauliflower florets
- 4 cups diced, peeled sweet potato
- 6 cups vegetable broth
- 1 tbsp lemon juice
- 1/3 cup Holland House White Cooking Wine
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp turmeric
- 1 1/2 tsp salt
- 1/2 tsp black pepper
- 1 can full-fat coconut milk
Preparation
Add all ingredients (except coconut milk) to a slow cooker and stir well.
Cover and cook on low for six to eight hours, or high for three to four hours.
Pour in coconut milk at the end.
Use an immersion blender to blend until smooth.
Serve topped with more coconut milk, cilantro, and crispy chickpeas (optional).
