Soft and Delicious Gluten-Free Sugar Cookies

Ingredients

  • 2 1/4 cups 1:1 gluten-free flour (e.g., @queenstreetbakery)
  • 1/2 tsp baking soda
  • 1/2 cup sugar
  • 1/4 tsp sea salt
  • 1 egg
  • 3/4 cup room temperature vegan butter (e.g., @earthbalance)
  • 1 tsp vanilla
  • 1/2 tsp almond extract

Preparation

  1. In a bowl, combine the gluten-free flour, baking soda, sugar, and sea salt.

  2. In a separate bowl, beat together the vegan butter and sugar. Then, add the egg, vanilla, and almond extract, and mix well.

  3. Combine the dry and wet ingredients until a dough is formed.

  4. Divide the dough into two portions. Roll out each portion on parchment paper until it's about 1/4 inch thick. Cover the rolled-out dough and place it in the fridge for at least 1 hour.

  5. Preheat the oven to 350°F (175°C).

  6. Using cookie cutters, cut the chilled dough into shapes.

  7. Place the cut-out cookies on a baking sheet lined with parchment paper.

  8. Bake the cookies in the preheated oven for about 10 minutes or until they're lightly golden around the edges.

  9. Allow the cookies to cool completely before decorating with your favorite icing.
