Easy Homemade S'mores Donuts

Ingredients

  • 1/2 cup almond milk
  • 1/4 cup nut butter (e.g., Santa Cruz Organic peanut butter)
  • 1/3 cup coconut sugar
  • 2 eggs
  • 1/2 tsp baking powder
  • 1/4 cup vanilla protein powder (e.g., Nuzest Smooth Vanilla Protein)
  • 1/4 cup all-purpose flour (e.g., Bob's Red Mill GF 1:1 Baking Flour)
  • Chocolate chips (e.g., Enjoy Life Foods dark chips)
  • Mini marshmallows

Preparation

  1. Preheat the oven to 350°F (175°C) and spray a donut pan with non-stick spray.

  2. In a high-powered blender or food processor, combine all the ingredients until creamy.

  3. Stir in chocolate chips and diced marshmallows (note: if you want marshmallows on top, add them after baking).

  4. Spoon the batter into the donut pan, filling each cavity. This recipe makes approximately 6 donuts.

  5. Bake in the preheated oven for 12 minutes.

  6. Allow the donuts to cool before removing them from the pan.

  7. Optional: If desired, microwave additional marshmallows to melt and drizzle them over the baked donuts.
