Cashew Butter S'mores Cookies
Ingredients
- 1/2 cup nut butter (coconut cashew butter)
- 2 eggs
- 1 cup all-purpose flour (gluten-free baking flour)
- 1/2 tsp. baking powder
- 1/3 cup granulated sugar (coconut sugar)
- 1/3 cup chocolate chips (mini chocolate chips)
- 28 mini marshmallows
Preparation
Preheat the oven to 350°F (175°C).
In a large bowl, whisk together the nut butter and eggs until well combined.
Add the all-purpose flour, baking powder, granulated sugar, and chocolate chips to the bowl. Stir until the mixture forms a dough.
Using a big cookie scoop, portion out the dough to make 7 large cookies. Place them on a baking sheet lined with parchment paper.
Gently press a few mini marshmallows onto the top of each cookie dough portion.
Bake the cookies in the preheated oven for about 10 minutes or until they are golden around the edges.
Once baked, remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
