Easy 5-Ingredient Caramel Slice

Ingredients

For the Base

  • 1 cup Almond Meal
  • 1/4 cup Rice Malt Syrup
  • 1 tbsp Coconut Oil

For the Caramel

  • 1 cup Peanut Butter
  • 1/4 cup Coconut Oil
  • 1/4 cup Rice Malt Syrup

For the Top

  • 100g Dark Chocolate
  • 1 tbsp Peanut Butter

Preparation

  1. In a bowl, combine the ingredients for the base and stir until well combined, forming a thick dough.

  2. Press the base mixture into a lined baking tray and set it aside in the fridge.

  3. In another bowl, combine the caramel ingredients. Heat the mixture in the microwave or on the stovetop until just melted, then whisk until smooth.

  4. Pour the caramel mixture over the base and refrigerate for a few hours until it sets.

  5. Once the caramel has set, melt the dark chocolate with peanut butter and pour it over the top of the caramel layer. Return the slice to the fridge.

  6. Keep the caramel slice stored in the fridge, and it can also be kept in the freezer.
