Fudgy Choc Caramel Cookies

Ingredients

  • 1 cup Flour
  • 1/2 cup Cacao Powder
  • 1/2 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • 1/2 cup Coconut Sugar
  • 1/4 cup Caramel (@naturescharm_au)
  • 3 tbs Coconut Oil
  • 2 tbs Almond Milk
  • 1 tsp Vanilla Extract
  • 1/4 cup Chocolate Chips

Preparation

  1. Preheat oven to 180°C.

  2. Sift together flour, cacao powder, baking powder, and baking soda in a large mixing bowl.

  3. In a separate bowl, combine sugar, caramel, coconut oil, almond milk, and vanilla.

  4. Mix the wet mixture into the dry ingredients to form a thick dough. Fold in chocolate chips.

  5. Roll the dough into balls and place them on a baking tray, spacing them apart and flattening them slightly. Bake for 15-18 minutes.

  6. As the cookies cool, they will harden. Once cooled, top with extra caramel and a drizzle of melted chocolate.

  7. Store the cookies in a container at room temperature for 3-4 days or in the fridge for up to a week.
