Sourdough Mangalore Buns (Deep Fried Banana Bread)

Ingredients

  • 11/2 cups whole wheat flour
  • 1 large spotty banana mashed
  • 3-4 tablespoons coconut sugar
  • 1/2 a teaspoon salt
  • 1/8th teaspoon soda bicarbonate
  • 3 tablespoons unfed sourdough starter at 100% hydration
  • 1-2 teaspoons oil
  • 1/2 a teaspoon cumin powder

Preparation

  1. Mix everything to a slightly stiff dough

  2. You will not require any additional liquid in this recipe

  3. You might only need to moisten you fingertips to bring the dough together

  4. Rest the dough for 3-4 hours or little more depending on the weather

  5. Roll out the dough into thicker discs than a the regular poori and deep fry
