Spiced Coconut Protein Pancakes with Lime and Pineapple
Ingredients
- 2/3 tablespoons coconut flour
- 2 tablespoons protein powder
- 1 tsp bicarb
- Couple of eggs
- Milk to make thick pancake batter consistency
- Splash of vanilla
- Grating of nutmeg
- Pinch of cinnamon
- Coconut oil for frying
Toppings
- Butter or coconut oil
- Coconut syrup
- Lime zest
- Lime wedge
- Pineapple
Preparation
Mix all the ingredients well.
Heat a pan to medium heat and add coconut oil.
Spoon about 2 tablespoons of batter per pancake and fry until golden, approximately 2 minutes per side. Do not overcook to avoid dryness.
Keep the pancakes warm in the oven while cooking the remaining batches.
Serve with butter or coconut oil, coconut syrup, lime zest, lime wedge, and pineapple. Enjoy.
