Spicy Butter Bean & Tomato Gnocchi Bake with Mozzarisella
Ingredients
- 1/2 red onion, chopped
- 2 cloves of garlic, minced
- 300g passata
- 1/2 tsp smoked paprika
- 1/2 tsp basil, oregano & chilli powder
- Sea salt & black pepper, to taste
- A few slices of MozzaRisella
- 120g butter beans
- 150g gnocchi, cooked
- Wholemeal flatbread
- Mashed avocado
- Balsamic glaze
Preparation
Sauté the chopped red onion and minced garlic in a little olive oil for 3-4 minutes.
Add the butter beans, passata, smoked paprika, basil, oregano, chilli powder, sea salt, and black pepper. Simmer for 2-3 minutes to thicken the sauce.
Stir in the cooked gnocchi and transfer the mixture into an ovenproof dish.
Top the mixture with a few slices of MozzaRisella.
Bake at 200°C for 10 minutes, or until the cheese melts.
While baking, prepare a wholemeal flatbread. Mash avocado on the flatbread and sprinkle with red onion, black pepper, and minced garlic.
Place the baked gnocchi mixture on the plate alongside the prepared flatbread.
Drizzle with balsamic glaze and garnish with fresh basil.
Serve with salad.
