Spicy Peanut Tempeh Lettuce Wraps
Ingredients
- 1 block tempeh
- 2 tablespoons liquid aminos
- 2 tablespoons water
- 2 tablespoons rice vinegar
- 1 tablespoon agave
- 2 tablespoons PB2 pure
- 1 lime
- 1 tablespoon sriracha or chili garlic sauce
- 3 cloves garlic
- 1 tablespoon fresh ginger
- 1/2 small red onion
- 1 bell pepper
- 5-6 mushrooms
- lettuce leaves
- 1 teaspoon coconut oil
Garnishes
- pea tendrils or cilantro
- peanuts or cashews
- purple cabbage
- cucumber
- green onion
- lime wedges
Preparation
Add aminos, water, vinegar, agave, lime juice, PB2, and chili garlic sauce to a bowl. Whisk to combine and add in crumbled tempeh to marinate.
In a large cast iron skillet melt 1 teaspoon coconut oil and sauté onion, garlic, ginger, red pepper, and mushrooms until fragrant for 2-3 minutes.
Pour in the tempeh and sauce mixture and bring to a simmer. Let it thicken for 2-3 minutes until the liquid is mostly absorbed.
Fill lettuce leaves with the mixture to make wraps and top with garnishes.
