Spicy Peanut Noodle Bowl

Ingredients

  • 1 package Palmini linguini
  • 1/2 small red onion, diced
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, minced
  • 1 small head broccoli, chopped
  • 8 ounces cremini mushrooms, quartered

Spicy peanut sauce

  • 1/4 cup water
  • 1/4 cup PB2 peanut butter
  • 2 tablespoons rice vinegar
  • 2 tablespoons Bragg coconut aminos
  • 1 tablespoon date syrup
  • 1 tablespoon chili garlic sauce
  • 1 teaspoon fresh ginger, minced
  • 1 garlic clove, minced
  • 1 lime, juiced

Garnishes

  • roasted peanuts
  • cilantro
  • lime juice

Preparation

  1. Add all ingredients for sauce to a small sauce pan over medium heat. Simmer for 5-10 minutes until just slightly thickened. You want it pretty runny.

  2. Heat 1 teaspoon coconut oil in a large cast iron skillet over medium high heat. Add in onion cooking for 2-3 minutes. Add remaining veggies, garlic, and ginger and sauté until just slightly tender - keep the veggies al dente!

  3. Drain Palmini noodles from boiling water and transfer to skillet with veggies. Toss to combine and add a small amount of oil if needed.

  4. Drizzle with sauce and stir to coat. Transfer to a bowl and top with garnishes!
