Baked Tofu Buddha Bowl with Peanut Dressing

Ingredients

  • 2 tbs of liquid aminos
  • 1 tbs of rice vinegar
  • 2 tsp of hoisin sauce
  • 2 tsp sesame oil
  • 1/2 tsp of ground ginger
  • 12 oz of diced tofu
  • Butter lettuce
  • Purple cabbage
  • Alfalfa sprouts
  • Zoodles
  • Purple rice noodles
  • Cucumber
  • Avocado
  • Red onion

Dressing

  • 1/4 cup of peanut butter
  • 2 tbs of liquid aminos
  • 2 tbs of rice vinegar
  • 2 tbs of water
  • 1 tbs of agave
  • 1 tsp of sesame oil
  • 1/2 tsp of ground ginger

Preparation

  1. Combine the first 5 ingredients in a bowl and stir well. Add tofu and allow to marinate.

  2. Preheat oven to 400° F.

  3. Bake tofu in the oven for 20 minutes.

  4. Remove tofu, roll it back in the leftover marinade, and place it back in the oven for another 20 minutes.

  5. Place the remaining ingredients onto plates of choice.

  6. Remove tofu from the oven, place it back in the marinade, and then add it to the dishes.

  7. Whisk all ingredients for the dressing in a large ramekin.

  8. Garnish the dishes with lime and sesame seeds. Serve and enjoy.
