Super Green Falafel with Spinach and Chickpeas

Ingredients

  • 1 can chickpeas
  • 1 lemon, juiced
  • 1 tbsp chopped parsley
  • 1 tbsp chopped chives
  • 1 tsp ground cumin
  • 1 tbsp wholemeal flour
  • 1 handful of spinach
  • 1/2 white onion
  • 1 fat clove of garlic
  • Salt & pepper

Preparation

  1. Roughly chop the onion and garlic, sauté until soft and lightly browned.

  2. Add chickpeas, lemon juice, chopped parsley, chopped chives, ground cumin, wholemeal flour, spinach, sautéed onion and garlic, salt, and pepper to a food processor.

  3. Pulse a few times to combine the ingredients. The mixture should still have some chunky bits.

  4. Transfer the mixture to a bowl and refrigerate for 20 minutes.

  5. After 20 minutes, take out the mixture and form it into small balls or patties, shaping them as desired.

  6. Heat a frying pan and add 1 tbsp olive oil.

  7. Gently fry the falafel for about 3-4 minutes on each side until they are golden brown and cooked through.
