Sweet and Smooth Mango Tart for Easter
Ingredients
Crust
- 10 pieces of digestive biscuits
- 3 tbsp melted butter
- 2 tbsp water
- 1 tbsp agave syrup
Filling
- 250 g frozen mango
- 4 dl whip cream
- 1 dl sugar
- 1 tsp lemon juice
- 1 tsp agar agar
Preparation
In a food processor, blend all crust ingredients together until you get a crust.
Press down the crust into the form and bake in the oven for 8 minutes at 200 degrees.
Let the crust cool down after baking.
Meanwhile, defrost the mango.
Add the defrosted mango to a food processor together with 0.5 dl whip cream and mix until smooth.
Add the mixture to a pot along with the remaining whip cream, sugar, and lemon juice.
Heat the mixture on high heat until boiling.
When boiling, add the agar agar and whisk for 3-4 minutes.
Pour the mixture into the cooled crust and let it set in the fridge for a few hours or overnight.
