Sweet and Smooth Mango Tart for Easter

Ingredients

Crust

  • 10 pieces of digestive biscuits
  • 3 tbsp melted butter
  • 2 tbsp water
  • 1 tbsp agave syrup

Filling

  • 250 g frozen mango
  • 4 dl whip cream
  • 1 dl sugar
  • 1 tsp lemon juice
  • 1 tsp agar agar

Preparation

  1. In a food processor, blend all crust ingredients together until you get a crust.

  2. Press down the crust into the form and bake in the oven for 8 minutes at 200 degrees.

  3. Let the crust cool down after baking.

  4. Meanwhile, defrost the mango.

  5. Add the defrosted mango to a food processor together with 0.5 dl whip cream and mix until smooth.

  6. Add the mixture to a pot along with the remaining whip cream, sugar, and lemon juice.

  7. Heat the mixture on high heat until boiling.

  8. When boiling, add the agar agar and whisk for 3-4 minutes.

  9. Pour the mixture into the cooled crust and let it set in the fridge for a few hours or overnight.

  10. Enjoy!
