Sweet Dreams Black Bean Muffins

Ingredients

  • 1 1/4 cup canned black beans (rinsed & drained)
  • 1/2 cup oat flour
  • 1/4 cup nut/seed butter
  • 1/3 cup maple syrup
  • 2 tbsp Sweet Dreams Blend (e.g., from @unicornsuperfoods)
  • 2 tbsp cocoa powder
  • 1 tsp baking powder
  • Pinch of salt

Preparation

  1. Preheat the oven to 350°F (175°C).

  2. In a good blender, combine the canned black beans, oat flour, nut/seed butter, maple syrup, Sweet Dreams Blend, cocoa powder, baking powder, and a pinch of salt.

  3. Blend everything until smooth.

  4. Transfer the batter to a greased mini muffin pan.

  5. Bake at 350°F (175°C) for 10-12 minutes or until the muffins are cooked through.

  6. Remove from the oven and let them cool.

  7. Enjoy as a nighttime treat to promote restful sleep.
