Sweet Dreams Black Bean Muffins
Ingredients
- 1 1/4 cup canned black beans (rinsed & drained)
- 1/2 cup oat flour
- 1/4 cup nut/seed butter
- 1/3 cup maple syrup
- 2 tbsp Sweet Dreams Blend (e.g., from @unicornsuperfoods)
- 2 tbsp cocoa powder
- 1 tsp baking powder
- Pinch of salt
Preparation
Preheat the oven to 350°F (175°C).
In a good blender, combine the canned black beans, oat flour, nut/seed butter, maple syrup, Sweet Dreams Blend, cocoa powder, baking powder, and a pinch of salt.
Blend everything until smooth.
Transfer the batter to a greased mini muffin pan.
Bake at 350°F (175°C) for 10-12 minutes or until the muffins are cooked through.
Remove from the oven and let them cool.
Enjoy as a nighttime treat to promote restful sleep.
