Sweet Potato Burritos


  • 4 flax seed tortillas
  • 1/3 cup of vegan queso
  • 1/2 a baked sweet potato sliced
  • 1 container of black beans
  • 2 hass avocados
  • 2 vine ripe tomatoes
  • 1/4 sliced red onion
  • 1/4 cup sliced kalamata olives


  1. Heat a cast iron pan on medium heat, lay tortillas one at a time on a large plate

  2. Use a teaspoon and scoop queso onto tortilla, than lay slices of sweet potato

  3. Next add black beans, avacado, tomato, onion and olives

  4. Roll folding sides in and than roll up place flap side down in pan for about 5 to 8 minutes flip over for 5 more minutes

  5. Repeat process with remaining ingredients and enjoy???? #threebunnies
