Vibrant Taco Salad with Fresh Vegetables and Beans
Ingredients
- Baby spinach
- Baby arugula
- Black beans
- Grape tomatoes
- Orange bell pepper
- Yellow bell pepper
- Avocado
- Lime
- Purple cabbage
- Red onion
- Green onions
Preparation
On a large plate pile on leafy greens followed by black beans.
Next add bell peppers, cabbage, and red onion.
Line grape tomatoes around plate and line in circles to center.
Place halved avocado on side or remove filling and place on top.
Finish with green onions, and fresh squeezed lime juice, for dressing we used pink himalayan salt and olive oil.
