Easy Vegan Tahini Cookies with Maple Syrup

Ingredients

  • 1 tbsp ground flaxseeds + 3 tbsp water
  • 1 cup + 2 tbsp almond flour (I used all purpose flour)
  • 1/2 cup tahini (I used @grecious_ltd )
  • 1/2 cup maple syrup
  • 1/4 cup coconut sugar
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 1/2 cup vegan chocolate chips

Preparation

  1. Preheat oven to 350F and prepare a lined baking sheet.

  2. Prepare the 'flax egg' by mixing together 1 tbsp ground flaxseeds with 3 tbsp of warm water in a small dish. Set aside for 5-10 minutes.

  3. In a large bowl, mix together all ingredients except the chocolate. Once the batter is made, fold in the chocolate chips.

  4. Taking a tablespoon or two of dough at a time, arrange the cookie dough onto the baking sheet, leaving a few inches of space in between each one (they'll spread out).

  5. Bake for around 15 minutes or until the edges are golden.

Tips

  1. Cookies may become crunchy if overbaked; adjust baking time for desired gooey or crunchy texture.
