Tahini Cookies
Ingredients
- 1 tbsp ground flaxseeds + 3 tbsp water
- 1 cup + 2 tbsp almond flour (i used all purpose flour)
- 1/2 cup tahini (i used @grecious_ltd )
- 1/2 cup maple syrup
- 1/4 cup coconut sugar
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp sea salt - 1/2 cup vegan chocolate chips
Preparation
Preheat oven to 350f and prepare a lined baking sheet
Prepare the 'flax egg' by mixing together 1 tbsp ground flaxseeds with 3 tbsp of warm water in a small dish
Set aside for 5-10 minutes
In a large bowl, mix together all ingredients except the chocolate
Once the batter is made, fold in the chocolate chips
Taking a tablespoon or two of dough at a time, arrange the cookie dough onto the baking sheet, leaving a few inches of space in between each one (they'll spread out)
Bake for around 15 minutes or until the edges are golden
