Easy Vegan Tahini Cookies with Maple Syrup
Ingredients
- 1 tbsp ground flaxseeds + 3 tbsp water
- 1 cup + 2 tbsp almond flour (I used all purpose flour)
- 1/2 cup tahini (I used @grecious_ltd )
- 1/2 cup maple syrup
- 1/4 cup coconut sugar
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp sea salt
- 1/2 cup vegan chocolate chips
Preparation
Preheat oven to 350F and prepare a lined baking sheet.
Prepare the 'flax egg' by mixing together 1 tbsp ground flaxseeds with 3 tbsp of warm water in a small dish. Set aside for 5-10 minutes.
In a large bowl, mix together all ingredients except the chocolate. Once the batter is made, fold in the chocolate chips.
Taking a tablespoon or two of dough at a time, arrange the cookie dough onto the baking sheet, leaving a few inches of space in between each one (they'll spread out).
Bake for around 15 minutes or until the edges are golden.
Tips
Cookies may become crunchy if overbaked; adjust baking time for desired gooey or crunchy texture.
