Tahini Cookies

Ingredients

  • 1 tbsp ground flaxseeds + 3 tbsp water
  • 1 cup + 2 tbsp almond flour (i used all purpose flour)
  • 1/2 cup tahini (i used @grecious_ltd )
  • 1/2 cup maple syrup
  • 1/4 cup coconut sugar
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt - 1/2 cup vegan chocolate chips

Preparation

  1. Preheat oven to 350f and prepare a lined baking sheet

  2. Prepare the 'flax egg' by mixing together 1 tbsp ground flaxseeds with 3 tbsp of warm water in a small dish

  3. Set aside for 5-10 minutes

  4. In a large bowl, mix together all ingredients except the chocolate

  5. Once the batter is made, fold in the chocolate chips

  6. Taking a tablespoon or two of dough at a time, arrange the cookie dough onto the baking sheet, leaving a few inches of space in between each one (they'll spread out)

  7. Bake for around 15 minutes or until the edges are golden
