Tender Coconut Berry Pudding Cups

Ingredients

  • 1 cup tender coconut meat (refrigerated if possible)
  • 1/2 cup frozen berries
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons coconut water
  • sweetener of choice

Preparation

  1. Blend all ingredients together until smooth.

  2. Spoon the mixture into cups.

  3. Top with your favorite toppings, such as 'Not'ella and additional berries.

  4. Serve immediately.

  5. Use frozen berries and refrigerated coconut meat for the best texture; refrigerating after preparation may not yield the same results.
