Three-Layer Raw Bounty Slice
Ingredients
Base
- 1/2 cup cashews
- 2/3 cup almond meal
- 3 TBS coconut oil
- 1 TBS maple syrup
Coconut layer
- 1 cup coconut oil (melted)
- 1/4 cup coconut milk (canned)
- 2 TBS maple syrup
- 1 tsp vanilla extract
- 1/4 tsp sea salt
- 3 cups shredded coconut
Chocolate layer
- 1/2 cup coconut oil
- 2 TBS maple syrup
- 1/2 cup raw cacao powder
Preparation
Line a 20x20cm baking pan with parchment paper.
Blend cashews, almond meal, coconut oil, and maple syrup in a food processor until it resembles crumbs.
Press the mixture into the pan until it coats the entire bottom.
Place the pan in the freezer while preparing the coconut layer.
Add coconut oil and coconut milk to a medium-sized bowl and whisk well. Then add maple syrup, vanilla extract, and sea salt, and mix well. After that, add the shredded coconut and mix until well combined.
Pour over the base, smooth with the back of a spoon, and place back into the freezer while making the chocolate layer.
Combine coconut oil and maple syrup, then add cacao powder and stir well.
Pour the chocolate over the coconut layer, spread it, and place back in the freezer for at least 3-4 hours until all layers have set.
Remove from the tin, slice immediately, and store in an airtight container in the freezer. Enjoy!
