Caramel Popcorn Candy Apples
Ingredients
- 15 pitted dates
- 1/4 teaspoon vanilla extract
- pinch of sea salt
- coconut milk (about 1/4 cup, add as needed for consistency)
- 3 apples
- 1 cup popcorn
Preparation
Blend dates, vanilla, salt and water in a mini food processor or small blender until a smooth paste forms.
Stick a wooden skewer into the bottom of a couple apples (honey crisp apples are recommended).
With a spatula, spread the date caramel evenly over each whole apple.
Roll it in your choice of toppings, such as popcorn, coconut ribbons, or vegan chocolate chips.
Place in fridge for at least 30 minutes to let it firm up slightly.
