Vegan Tofu Alfredo Pasta
Ingredients
- 1 16 oz. block firm silken or soft tofu
- 1/4 cup olive oil or melted vegan butter
- 1/2 cup vegetable broth or water
- 1/4 cup tamari or Bragg’s Liquid Aminos
- 1/3 cup nutritional yeast
- 2 cloves garlic
- 1 teaspoon dried basil
- 2 teaspoons onion powder
- 2 Tablespoons lemon juice or juice of 1 lemon
Preparation
Cook 16 oz. of fettuccine pasta according to package instructions
Sauté spinach until wilted
Blend all sauce ingredients until smooth.
Pour the sauce over the cooked pasta.
Serve with the sautéed spinach and other favorite vegetables.
