Vegan Apple Pie Granola

Ingredients

  • 1 1/2 cup oats
  • 1 tablespoon coconut sugar (optional for more sweetness)
  • 2 tablespoons coconut oil
  • a handful of cranberries
  • 1/2 cup finely chopped almonds
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup
  • 1/3 cup chopped dried apples
  • also you can use a apple pie spice mixture if you have one) ➖

Preparation

  1. Preheat oven to 180°C. Next, add all the ingredients to a bowl except the maple, vanilla and coconut oil and stir to combine. In a small saucepan, add coconut oil and maple syrup. Warm over medium heat for 2-3 minutes, whisking frequently until the two are totally combined. Add vanilla extract and whisk once more. Pour over the other ingredients and stir to combine until all oats and nuts are thoroughly coated. Arrange on a large baking sheet and spread into an even layer. Now just bake it for around 15-20 minutes, stirring occasionally, until golden brown! TRY it out yourself
