Vegan Aquafaba Meringues

Ingredients

  • 1/2 tsp xantam gum; ? 1 cup Monk Fruit
  • or Erythritol or xylitol (vegan and natural 0cal sweetener) or use coconut sugar; I like to mix both. ?Pitaya powder for pink color (optional); ?Whip the aquafaba and xantam gum on high for approx 15 minutes
  • or until the peak of stiff form. Once the aquafaba mixture reaches the stiff consistency (it should look glossy and “full”
  • not “foamy”)
  • fold in the sugar slowly just until it mixes in. Then the powder
  • if using it
  • for pink color. ?Scoop some of the mixture into a baking mat or on parchment paper and bake in a very low temperature (200F) for about 2 hours. Remove from the oven and let it cool. Use the meringues to decorate the desserts
