Vegan Banana Blondies

Ingredients

  • 1 flax egg
  • 2 very ripe mashed bananas
  • 2 tbsp olive oil
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup
  • 2 tbsp tahini
  • 1/8 cup arrowroot flour
  • 1/3 cup cassava flour
  • 1 serving plant protein powder
  • if you choose to skip this, add 2 tbsp almond flour)
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • dash of sea salt
  • topping:
  • sprinkle of extra dark chocolate chips
  • i used @paschachocolate 85%)
  • sprinkle of cacao nibs
  • sprinkle of sea salt
  • directions:
  • preheat oven to 350 degrees
  • lightly coat glass baking dish with oil

Preparation

  1. Preheat oven to 350 degrees

  2. Lightly coat glass baking dish with oil

  3. In a large glass bowl, add flax egg, mashed banana, vanilla, maple, tahini, and olive oil and whisk well

  4. Stir in flours, protein, cinnamon, baking soda and sea salt

  5. Mix well until creamy batter forms

  6. Pour into baking dish

  7. Sprinkle with chocolate chips, cacao nibs and sea salt and bake for 18-20 minutes or until cooked through
