Vegan Banana Bread with Spices

Ingredients

Dry

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cloves
  • 1/2 tsp ground ginger

Wet

  • 1 cup mashed bananas (about 2 very ripe bananas)
  • 1 cup canned coconut milk, mixed well before measuring
  • 1/2 cup canola oil
  • 1 Tblsp white or apple cider vinegar
  • 1 Tblsp pure vanilla extract

Preparation

  1. Grease and flour an 8x8 pan, or a large loaf pan, or line 18 cupcake tins with liners.

  2. Mix the dry ingredients together in a bowl.

  3. Mix the wet ingredients together in another bowl.

  4. Combine the wet mixture with the dry mixture.

  5. Pour the batter into the prepared pan.

  6. Bake at 350°F until a toothpick inserted comes out clean.
