Vegan Breakfast with Eggs and Fresh Fruit
Ingredients
- Vegan eggs @eatjust
- Spanish onion, chopped
- Cherry tomatoes, garden fresh
- Spinach
- Vegan cheese, @violifefoods
- Salt & Pepper
- Fresh mango, cubed
- Blueberries, my favorite
- Kiwi, sliced
- Naan bread
Preparation
Start by sauteing the onions until translucent.
Add halved tomatoes and whole baby spinach.
Saute until tomatoes get a bit of a grill mark and spinach wilts.
Add vegan eggs, once they start to firm add vegan cheese. I used the smoked cheddar!
Fold egg over cheese to encourage melting.
