Vegan Breakfast with Eggs and Fresh Fruit

Ingredients

  • Vegan eggs @eatjust
  • Spanish onion, chopped
  • Cherry tomatoes, garden fresh
  • Spinach
  • Vegan cheese, @violifefoods
  • Salt & Pepper
  • Fresh mango, cubed
  • Blueberries, my favorite
  • Kiwi, sliced
  • Naan bread

Preparation

  1. Start by sauteing the onions until translucent.

  2. Add halved tomatoes and whole baby spinach.

  3. Saute until tomatoes get a bit of a grill mark and spinach wilts.

  4. Add vegan eggs, once they start to firm add vegan cheese. I used the smoked cheddar!

  5. Fold egg over cheese to encourage melting.
