Vegan Cheesy Nachos Supreme
Ingredients
- 1 pack vegan mince (e.g., @vivavivera)
- 1 tbsp vegetable oil
- 1 tbsp taco seasoning
- 2 large tomatoes
- 1 red onion
- 1 bag tortilla chips
- Vegan sour cream (e.g., @oatly)
- 1 bunch fresh coriander
Vegan Cheese Sauce
- 1 cup unsweetened plant milk
- 1.5 cups shredded vegan cheese (e.g., @violife_foods)
- 1/2 tsp chilli powder (add chilli flakes for heat if using mild)
- 1/2 tsp paprika (regular or smoked)
- Salt to taste
Preparation
Peel and dice the red onion, dice the tomatoes, and chop the fresh coriander.
Prepare the vegan cheese sauce by melting the shredded vegan cheese with the plant milk in a saucepan. Whisk in the chilli powder and paprika, and season with salt to taste. Bring the mixture to a gentle boil and cook for 5-7 minutes until it thickens. Remove from heat and set aside.
Heat the vegetable oil in a frying pan and add the vegan mince. Mix in the taco seasoning and cook on medium heat until the mince is piping hot.
To assemble the nachos, start by placing a layer of tortilla chips on a large serving dish. Top with the cooked vegan mince, diced tomatoes, and red onion. Pour the vegan cheese sauce over the toppings, add dollops of vegan sour cream, and garnish with plenty of chopped coriander. For extra layers, repeat the process by adding another layer of tortilla chips and the same toppings. Repeat as desired.
