Vegan Chickpea Burger with Quinoa and Vegetables

Ingredients

  • 1 cup of canned chickpeas, mashed
  • 1/4 cup black beans
  • 2 tbsp soy sauce or coconut aminos
  • 2 tbsp tomato paste
  • 1 tsp garlic powder
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 cup diced onion
  • 1 cup mixed peas, carrots, & corn (I used frozen, thawed)
  • 1/2 cup chopped bell pepper
  • 1 cup cooked quinoa
  • 1/2 cup vital wheat gluten

Preparation

  1. Mash the chickpeas with a fork and mix in all ingredients together except for wheat gluten

  2. Once ingredients are mixed, add wheat gluten and stir until mixed then knead it about 20 times

  3. Form into 6 burger patties (about 3/4 inch thick)

  4. Heat a skillet to medium and coat with olive oil spray, sear each patty for 5 minutes on each side until crispy

  5. Finish the burgers off by preheating them in a 350 oven and baking on a baking sheet for 30 minutes
