Vegan Chickpea Burger with Quinoa and Vegetables
Ingredients
- 1 cup of canned chickpeas, mashed
- 1/4 cup black beans
- 2 tbsp soy sauce or coconut aminos
- 2 tbsp tomato paste
- 1 tsp garlic powder
- 1/2 tsp chili powder
- 1/2 tsp cumin
- 1/2 cup diced onion
- 1 cup mixed peas, carrots, & corn (I used frozen, thawed)
- 1/2 cup chopped bell pepper
- 1 cup cooked quinoa
- 1/2 cup vital wheat gluten
Preparation
Mash the chickpeas with a fork and mix in all ingredients together except for wheat gluten
Once ingredients are mixed, add wheat gluten and stir until mixed then knead it about 20 times
Form into 6 burger patties (about 3/4 inch thick)
Heat a skillet to medium and coat with olive oil spray, sear each patty for 5 minutes on each side until crispy
Finish the burgers off by preheating them in a 350 oven and baking on a baking sheet for 30 minutes
