Protein Cali Veggie Burger with Sweet Potato Fries
Ingredients
Sweet potato fries
- 2 sweet potatoes
- 1 tablespoon olive oil
- salt
- pepper
Veggie burger
- 1 cup canned chickpeas
- 1/4 cup black beans
- 2 tablespoons soy sauce or coconut aminos
- 2 tablespoons tomato paste
- 1 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 cup diced onion
- 1 cup mixed peas, carrots, and corn
- 1/2 cup chopped bell pepper
- 1 cup cooked quinoa
- 1/2 cup vital wheat gluten
Preparation
Preheat oven to 450°F.
Slice sweet potatoes into 1/4 inch thick pieces.
Toss with 1 tablespoon olive oil, salt, and pepper.
Roast on a baking sheet for 15 minutes.
Flip and roast for another 15 minutes until desired crispness.
Mash the chickpeas with a fork and mix in all ingredients except wheat gluten.
Add wheat gluten and stir until mixed, then knead about 20 times.
Form into 6 burger patties about 3/4 inch thick.
Heat a skillet to medium and coat with olive oil spray.
Sear each patty for 5 minutes on each side until crispy.
Preheat oven to 350°F and bake patties on a baking sheet for 30 minutes.
