Protein Cali Veggie Burger with Sweet Potato Fries

Ingredients

Sweet potato fries

  • 2 sweet potatoes
  • 1 tablespoon olive oil
  • salt
  • pepper

Veggie burger

  • 1 cup canned chickpeas
  • 1/4 cup black beans
  • 2 tablespoons soy sauce or coconut aminos
  • 2 tablespoons tomato paste
  • 1 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 cup diced onion
  • 1 cup mixed peas, carrots, and corn
  • 1/2 cup chopped bell pepper
  • 1 cup cooked quinoa
  • 1/2 cup vital wheat gluten

Preparation

  1. Preheat oven to 450°F.

  2. Slice sweet potatoes into 1/4 inch thick pieces.

  3. Toss with 1 tablespoon olive oil, salt, and pepper.

  4. Roast on a baking sheet for 15 minutes.

  5. Flip and roast for another 15 minutes until desired crispness.

  6. Mash the chickpeas with a fork and mix in all ingredients except wheat gluten.

  7. Add wheat gluten and stir until mixed, then knead about 20 times.

  8. Form into 6 burger patties about 3/4 inch thick.

  9. Heat a skillet to medium and coat with olive oil spray.

  10. Sear each patty for 5 minutes on each side until crispy.

  11. Preheat oven to 350°F and bake patties on a baking sheet for 30 minutes.
