Multi-Colored Sweet Potato Fries with Guacamole

Ingredients

  • 1 lb. sweet potatoes, varied colors such as purple and orange, peeled and cut into 1/2-inch thick fry shapes
  • 1 tbsp olive or avocado oil
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1/2 tsp each turmeric and cumin, optional
  • ketchup or guacamole for dipping

Preparation

  1. Preheat oven to 375 degrees F. Line a baking sheet with parchment paper

  2. Pat cut sweet potatoes dry with paper towels to remove any excess moisture that would prevent the fries from crisping

  3. Place prepared sweet potatoes, oil, and spices in a large bowl, and mix until all fries are evenly coated

  4. Spread fries onto the prepared baking sheet, spaced evenly apart so that none are overlapping.Bake 35 to 40 minutes, until the fries are crisp and golden. It is best to flip them halfway through baking in order to achieve an even texture and browning
