Vegan Ciabatta Olive Bread

Ingredients

  • 4 1/4 cups ciabatta flour (bread flour)
  • 2 cups of water
  • 1/4 teaspoon of instant yeast (if the flour you buy already has yeast in it, you can leave it this one out)
  • 1 1/2 teaspoons sea salt
  • 1/2 teaspoon olive oil
  • 120g mixed olives
  • 1 tablespoon dried mediterranean herbs

Preparation

  1. In a bowl, combine the yeast and the warm water. Cover with plastic or with a kitchen towel and let it proof for at least 5 minutes. In another bowl combine the salt and the bread flour. (if you buy flour that already has yeast in it then you do not need to add extra yeast!) Mix everything either with your hands or stand mixer together. Add the yeast/water mixture and mix on low until a shaggy dough forms. Cover bowl with plastic or a towel and let the dough rise at a warm place for around 1 hour, time depends on the flour and how the dough rises

  2. Preheat oven to 200 C°. Now, put the dough onto a floured surface. Sprinkle 1/3 of the chopped olives on top and fold the dough once. Repeat two more times until you've used all the Olives and sprinkle some Mediterranean herbs on it as well. Then, form a ball with floured hands. Cover the dough loosely with plastic and let rest for at least 30 minutes (another hour or two recommended), until doubled in size, while the dutch oven preheat. Once the Dutch oven has preheated, transfer the dough ball into the heated Dutch oven. Cover with the lid and bake for 30 minutes

  3. Remove the lid and bake, uncovered, for 15 more minutes or until golden brown. Enjoy this yummy bread recipe
