Vegan Deviled Potatoes Appetizer
Ingredients
- Baby Potatoes
- Silken Tofu
- Bread and Butter Pickles
- Vegan Mayo
- Dijon Mustard
- Turmeric Powder
- Garlic Powder
- Smoked Paprika
- Kala Namak (Black Salt)
- Apple Cider Vinegar
- Salt & Pepper to taste
Preparation
Boil the baby potatoes until tender and allow them to cool.
Cut the potatoes in half lengthwise and scoop out the centers to create hollow shells.
Mash the scooped potato centers with silken tofu, vegan mayo, Dijon mustard, turmeric powder, garlic powder, smoked paprika, kala namak, and apple cider vinegar.
Chop the bread and butter pickles and fold them into the mixture, then season with salt and pepper to taste.
Stuff the mixture back into the potato shells and garnish as desired.
