Vegan Gluten-Free Eggnog Pancakes

Ingredients

  • 1 1/2 cup Califia Farms eggnog
  • 3 tbsp coconut oil (melted)
  • 3 tbsp water
  • 1 tsp vanilla extract
  • 2 tbsp ground flax seeds
  • 2 cups gluten free flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp kosher sea salt

Toppings

  • Maple syrup
  • Pomegranate seeds

Preparation

  1. In a large bowl, mix all dry ingredients until well incorporated (gluten-free flour, flax seeds, baking powder, baking soda, cinnamon, sea salt).

  2. In another bowl, mix all wet ingredients (eggnog, water and coconut oil).

  3. Slowly start to pour wet mixture into dry mixture and combine until well incorporated.

  4. Use a non-stick pan and place it on a medium-high heat.

  5. Once the pan is hot, pour pancake batter to desired size.

  6. Let pancakes cook 2-3 minutes on each side.

  7. Plate, garnish and enjoy!
