Vegan & Gluten Free Fluffy Eggnog Pancakes

Ingredients

  • 1 1/2 cup @califiafarms eggnog
  • 3tbsp coconut oil (melted)
  • 3tbsp water
  • 1tsp vanilla extract
  • 2tbsp ground flax seeds
  • 2 cups gluten free flour (I used Bob’s Red Mill)
  • 1tsp baking powder
  • 1/2tsp baking soda
  • 1/2tsp cinnamon
  • 1/4tsp kosher sea salt
  • Toppings
  • Maple syrup
  • Pomegranate seeds

Preparation

  1. In a large bowl mix all dry ingredients until well incorporated (gf flour, flax, baking powder, baking soda, cinnamon, sea salt). In another bowl mix all wet ingredients (eggnog, water &coconut oil)

  2. Slowly, start to pour wet mixture into dry mixture and combine until well incorporated

  3. Use a non stick pan and place on a medium high fire

  4. Once pan is hot, pour pancake batter to desired size

  5. Let pancakes cook 2-3 mins on each side

  6. Plate, garnish and enjoy
