Vegan & Gluten Free Fluffy Eggnog Pancakes
Ingredients
- 1 1/2 cup @califiafarms eggnog
- 3tbsp coconut oil (melted)
- 3tbsp water
- 1tsp vanilla extract
- 2tbsp ground flax seeds
- 2 cups gluten free flour (I used Bob’s Red Mill)
- 1tsp baking powder
- 1/2tsp baking soda
- 1/2tsp cinnamon
- 1/4tsp kosher sea salt
- Toppings
- Maple syrup
- Pomegranate seeds
Preparation
In a large bowl mix all dry ingredients until well incorporated (gf flour, flax, baking powder, baking soda, cinnamon, sea salt). In another bowl mix all wet ingredients (eggnog, water &coconut oil)
Slowly, start to pour wet mixture into dry mixture and combine until well incorporated
Use a non stick pan and place on a medium high fire
Once pan is hot, pour pancake batter to desired size
Let pancakes cook 2-3 mins on each side
Plate, garnish and enjoy
