Vegan Gluten-Free Pumpkin Banana Bread

Ingredients

  • 3 tbsp flax meal
  • 1/4 cup water
  • 1 ripe banana
  • 1/2 cup softened pitted Medjool dates
  • 1/2 cup pumpkin purée
  • 1/2 cup nut or flax milk
  • 1/2 tsp apple cider vinegar
  • 1 tsp vanilla
  • 1/2 cup sprouted rolled oats
  • 1/2 cup cassava flour
  • 1/3 cup unflavored protein powder
  • 1/2 tsp baking soda

Preparation

  1. Mix flax and water in a large bowl and let sit for 5-10 minutes.

  2. In a blender or food processor, combine dates, vanilla, banana, milk, and pumpkin purée and blend until creamy.

  3. Add the blended mixture to the flax mixture and stir well.

  4. Add oats, cassava flour, and protein powder and mix until fully combined.

  5. Add baking soda and vinegar and stir.

  6. Pour into an oiled bread pan and bake at 375 degrees for 35-40 minutes.
