Vegan & Gluten Free Pumpkin Banana Bread

Ingredients

  • no sweetener vegan/gluten free pumpkin banana bread:
  • makes 8 slices:
  • 1 ripe banana
  • 1/2 cup softened pitted medjool dates
  • 1/2 cup pumpkin purée
  • 1/2 cup nut or flax milk
  • 1/2 tsp apple cider vinegar
  • 1 tsp vanilla
  • 1/2 cup @onedegreeorganics sprouted rolled oats
  • 1/2 cup cassava flour
  • 1/3 cup unflavored protein (i used @sproutliving epic protein)
  • 1/2 tsp baking soda

Preparation

  1. Mix flax and water in a large bowl and let sit

  2. Meanwhile in a lender or food processor, combine dates, vanilla, banana, milk and pumpkin purée and blend until creamy

  3. Add to flax mixture and stir well

  4. Add oats, cassava and protein and mix until fully combine

  5. Add baking soda and vinegar and stir

  6. Pour into an oiled bread pan and bake at 375 degrees for 35-40 minutes
